Ginger Powder Recipes – Vegetarian Fried Rice – Vegan Recipes

 

Today, I run out of ginger and I wanted to make vegetarian fried rice. I usually buy enough ginger to last through the week but we unexpectedly made some extra food which used up most of the ginger.

I also couldn’t think of anything else to make and was in the mood for vegetarian fried rice so I substituted ground ginger powder for fresh ginger.

I’ve never used fresh ground ginger powder when cooking vegetarian fried rice. I normally use it in tea or lattes or health tonics. I wasn’t sure how the vegetarian rice would turn out with ground ginger powder, but to my surprise, the ginger powder gave the rice the taste that I wanted.

I had already prepared the rice in the morning. Ideally, when making fried rice, you should prepare the rice the day before. I don’t know why, but that’s just what fried rice is. You have to use a day’s old stale rice. I made it today morning so it wasn’t as old as it should be but I made dinner 8 hours later so I figured it was sort of half way there 🙂

Serves 1 and a half people 🙂

 

INGREDIENTS:

 

Rice

1/2 cup White Basmati Rice

1.5 cups water

1/2 tsp salt

 

Stir-Fry

8 stalks of green beans chopped

1 small carrot chopped

1 leaf savoy cabbage chopped

3 spring onion stalks chopped (keep the spring greens and white spring onion stalk separate)

1/4 large bell pepper chopped

3 large cloves of garlic chopped

1/2 tsp ginger powder

2 tbsp soy sauce

1 tbsp vinegar

1/2 tsp black pepper

1/2 tsp brown sugar

1 green chilli

2 tbsp sunflower oil or other neutral oil

Salt to taste

METHOD:

 

On a high flame, add the oil to your wok or large pan. You need a large flat pan to properly fry the rice.

Add the chopped garlic, ground ginger powder and chilli.

Add the chopped carrots and french beans and mix.

Add the soy sauce and sugar. Mix. Then add the vinegar and black pepper.

Once the the carrots and french beans are semi cooked, add the cabbage and green pepper.

Finally, add the white spring onion stalks which are chopped and the rice.

Keep mixing on a high flame.

After about 5 minutes, add the spring greens and serve hot.

This vegetarian fried rice with ground ginger powder instead of fresh ginger tasted so yummy, I went for seconds.

I just ate the fried rice on its own – it was quite delicious.

Normally, fried rice is eaten with vegetarian manchurian balls in India. But making manchurian balls is another mission.

I love eating fried rice as it is quick to make and you can use left over rice. Also, it has all the good veg in it and is healthy apart from the carbs 😀
