Turmeric Banana Fluffy Golden Pancakes Recipe – Eggless Pancakes – Pancake Recipes – Breakfast Recipes

When we have ultra ripe bananas, that only means one thing – pancakes! (Or it can also mean cake)

I had one ripe banana which I was not going to eat and the best way to use it up was to make these delicious turmeric banana pancakes.

I added 1/4 tsp of turmeric powder to give them that wonderful yellow sunny colour now that it’s summer and it would complement the bananas well.

As these are eggless pancakes, adding banana gives the pancakes a softer texture. I also added 1.5 tsp of baking powder to make them fluffier. You can add less baking powder if you don’t like this, they will simply be less fluffier but still very edible.

These turmeric banana pancakes are a wonderful recipes for the kids.

If you’re vegan, you can also make these pancakes. Simply replace the honey with maple syrup and replace the dairy milk with plant-based milk with a neutral flavour e.g. oat milk or almond milk.

INGREDIENTS:

 

Dry Ingredients:

 

1 cup plain flour

1.5 tsp baking powder

1/4 tsp turmeric powder

 

Wet Ingredients:

 

1 mashed very ripe banana (the ripper, the better)

3/4 cup milk (or plant based milk)

1 tsp honey (or maple syrup)

1 tsp sunflower oil

 

For Garnishing:

 

Banana coins

Blueberries

Honey / maple syrup

Walnuts

METHOD:

 

In a bowl, mix your dry ingredients which are flour, baking powder and turmeric powder.

 

In another bowl, mix your wet ingredients i.e. banana, milk, oil and honey.

 

Add the wet ingredients to your dry ingredients and mix the two. Do not overmix.

 

Set this banana turmeric pancake mixture aside and let it rest for 10 minutes.

 

Use a flat non-stick pan on a low – medium flame to cook your pancakes.

 

Tip: You know the pan is hot enough when you pour a few droplets of water on the pan and they dance on the surface before boiling off. If the pan is not hot enough, the water will just lie on the pan. If the pan is too hot, the water will burn off immediately.

 

Use a ladle to pour batter onto the pan for one pancake.

 

Cook on a low medium flame. We don’t want the pancakes to be raw on the inside.

 

When you see bubbles forming on top and it seems to have dried up a bit, check the bottom of the pancake to see if it has browned.

 

If it has browned, flip the pancake over slowly and let it cook until you feel the pancake is cooked throughout. I usually keep checking to make sure there are no raw patches.

 

This turmeric banana pancake batter will make 6 pancakes.

 

Stack the pancakes.

 

Drizzle honey or maple syrup. Add banana coins, blueberries and walnuts to garnish it. You can any toppings you like.
