Viral Cowboy Caviar Recipe – Healthy Vegetarian Salad Recipe With Tortilla Chips – Sunflower seed and Pumpkin seed Recipe – Healthy Snack Recipes

 

Today, I made the viral cowboy caviar recipe that has been trending all over tiktok and instagram. I don’t really follow trending recipes if they don’t look that interesting e.g. the peanut butter rice cake (I mean, what is that?). However, this cowboy caviar recipe sounded so healthy and I could not skip past it.

I added my own spin on this cowboy caviar recipe by modifying the original dressing for the cowboy caviar.

I added sunflower seeds and pumpkin seeds to the dressing along with other ingredients because if we are making it healthy, we might as well go all the way, right?

As it’s similar to a salad (forgetting the fancy name), adding sunflower and pumpkin seeds seemed like an interesting modification.

The original recipe also calls for feta cheese, however, I did not have this, so I used paneer instead. Paneer is a type of Indian cottage cheese made from cow’s milk. If you have feta cheese, then by all means, use that.

The original recipe also calls for taco seasoning which I did not have. I am not a fan of buying too many things and if it is possible to use other ingredients to substitute the required ingredient, I do so. I did a search on what taco seasoning has in it, and it came up with paprika, oregano, garlic powder, onion powder. I already have paprika and oregano. I used fresh garlic instead of garlic powder and there are already onions in the salad, so I didn’t see the need to add more onion to the dressing. (Taco seasoning also has cumin powder in it, I forgot to add this to the recipe, but by all means add this. Cumin powder tastes so delicious in salads!)

This cowboy caviar recipe was so quick and easy to make and it tasted so delicious with tortilla chips as well!

If you are vegan, skip the feta cheese / paneer and use vegan cheese instead of cheddar cheese.

Make this cowboy caviar and keep it in the fridge. It can last for up to 3 days and the next time you find yourself reaching for an unhealthy snack, you can simply fall back on this yummy healthy salad packed with protein, vitamins and minerals.

Makes a large bowl of cowboy caviar – if you are sharing it as a snack, can probably be enough for 5 – 6 people

 

INGREDIENTS:

 

For the salad:

 

1/4 red bell pepper

1/4 green bell pepper

1/4 yellow bell pepper

1/2 tomato

1/4 red onion

1 small spring onion

1/2 avocado (not too ripe)

1/2 kiwi fruit (or you can use pineapple or peaches – I didn’t have either of these, but I can imagine the pineapple would taste amazing!)

1/4 cup black beans

1/4 cup black eyed beans

1/4 cup corn

1/4 cup paneer (or feta cheese)

2 tbsp cheddar cheese (or vegan cheese)

1/2 chopped jalapeno ( I used the tinned ones)

 

For the dressing:

 

1/4 cup mixed sunflower seeds and pumpkin seeds

1 garlic clove

Salt to taste

1/4 cup chopped fresh coriander leaves

1.5 tsp paprika

1 tsp oregano

1/2 tsp cumin powder

2 tbsp lime or lemon juice

1 tbsp virgin olive oil

1 tbsp white vinegar

1 tbsp honey / maple syrup

 

METHOD:

 

Make the salad first.

Simply chop up all the vegetables and fruits.

Add them to a bowl. Add the rest of the ingredients i.e. beans, cheese and jalapenos.

 

Next, make the dressing.

Add all the ingredients to a blender and blend.

 

Pour your dressing onto the salad.

Mix.

 

Enjoy this cowboy caviar cold with your tortilla chips!

This cowboy caviar salad was so delicious and it tasted so good today with the hottest day we are having here in the UK in this heatwave.

I have already finished half of this cowboy caviar which is meant to be a snack. But I’m not feeling guilty at all because it’s so healthy 🙂
