For the cashew milk (makes ~2 cups):
- ½ cup raw cashews (soaked for 4+ hours or overnight)
- 1 cup water
- 1–2 medjool dates (optional, for sweetness)
For the mushroom matcha mango latte:
- 2/3 tsp Better Food Mood Mushroom Matcha Blend
(Lion’s mane, matcha, ashwagandha, moringa & vanilla) - Water
- 1 ripe mango, peeled and chopped
- 1 cup homemade cashew milk
- Ice cubes
- Optional: splash of maple syrup or honey

🍹 Instructions
Step 1: Make the Cashew Milk
Drain soaked cashews. Rinse and Blend with water and dates until smooth. Refrigerate.
Step 2: Prepare the Mushroom Matcha Shot
In a small bowl or cup, whisk 2/3 tsp (3g) of your lion’s mane matcha powder with 30ml hot water at 80 degrees Celsius until fully dissolved. (Use a matcha whisk or handheld frother for best texture.)
Step 3: Blend the Mango
In a blender, purée the mango with a splash of water until smooth.
Step 4: Layer & Serve
In a glass, layer:
- First, add the mango puree
- Add ice
- Add Cashew milk
- Pour over the Mushroom matcha shot
