Healthy Chia Pudding Dessert with Granola / Muesli, Banana, Kiwi Fruit, Yoghurt, Blueberries, Sunflower Seeds & Pumpkin Seeds

If you are craving a dessert but want to keep it healthy, then look no further than this healthy and delicious chia pudding dessert complete with chia pudding, granola or mueli, fruits such as banana, kiwi fruit, blueberries, pomegranate arils and yoghurt.

This healthy chia pudding can be eaten as breakfast as well. It looks so pretty and tastes absolutely refreshing. I would take this any day over cake (I might take that back).

This chia pudding was so much fun to put together and so quick and easy.

You do need to ensure the chia seeds are soaked well so I prepared the chia pudding one hour beforehand.

Ingredients:

1 tbsp Chia seeds

Water for soaking chia seeds

Half a banana chopped into coins

One kiwi fruit

Handful of blueberries

Handful of pomegranate arils

50g of granola or muesli

1 tbsp yoghurt (you can add 1/4 tsp vanilla essence to this for flavouring)

Pumpkin seeds, Sunflower Seeds and Brazil nuts for garnishing

Honey or any other sweetener

Method:

Soak the chia seeds in water and place in fridge. Keep checking every 20 minutes to mix them so that they all soak water evenly, and also to add extra water if needed. I soaked them for one hour. You can soak for longer if you wish or soak them overnight.

Chop up the banana into banana coins, chop the kiwi fruit as well.

Get your favourite glass, it’s now time to create this delicious layered chia pudding!

Place your banana coins around the bottom of the glass first.

Pour in your chia pudding. (You can add some sweetener to the chia pudding beforehand if you wish)

Add a layer of mixed fruits comprising of your blueberries, kiwi fruit and pomegranate.

Then add your granola or muesli.

Add another layer of mixed fruits comprising of blueberries, kiwi fruit and pomegranate.

Add yoghurt.

Add more pomegranate if you wish. Garnish with pumpkin seeds, sunflower seeds and add brazil nuts.

Drizzle your sweetener of choice or honey on top and enjoy!
