Moringa Powder & Vanilla Pancakes – Eggless Pancakes – Vegan Pancakes – Vegetarian Recipes UK

 

Today was a day for moringa and vanilla pancakes. As a vegetarian who doesn’t eat eggs, I have always struggled with eating pancakes.

There’s always that awkward situation when someone says, ohhhh, I love pancakes. Let’s check out that pancake place and I think, ugh, but I don’t eat eggs. I then have to pretend that I’m excited too and find something else on the menu to eat!

It’s not that I don’t eat eggs at all – I do eat them in cakes, chocolates and even croissants, but if at all possible, I would prefer to eat these desserts and pastries without eggs.

Today, I will share a moringa & vanilla pancake recipe that doesn’t use eggs. I did use milk but if you are vegan, you can use a plant-based milk like almond or oat milk.

INGREDIENTS:

 

1 cup (125g) plain flour

2 tbsp brown sugar

1 tsp moringa powder

1/2 tsp salt

1 tbsp baking powder

1 tbsp apple cider vinegar

1 tsp vanilla essence

1 cup milk (or plant-based milk)

 

METHOD:

 

In a bowl, mix all the dry ingredients i.e. plain flour, sugar, moringa powder, salt and baking powder.

In another bowl, add the wet ingredients i.e. milk, vanilla essence and apple cider vinegar. Mix and rest for 5 minutes.

Add the wet ingredient mixture to the dry mixture and whisk.

Let this moringa pancake mix rest for 10 minutes.

 

On a pan with a medium flame, add 3 tbsp of the pancake mix to the pan. You can make 2 or 3 moringa pancakes at a go depending on how big your pan is.

When the top begins to bubble, flip the moringa pancake and cook it for roughly 2 -3 minutes until it is golden brown on the bottom.

You want to ensure that the moringa pancake is well cooked throughout.

 

Stack the moringa pancakes on top of each other.

Add toppings such as honey or maple syrup, banana coin, blueberries, chocolate chips, butter and serve warm.
