Today, I made these vegan oats omelettes with cabbage, tomato, green pepper, onions, ginger, garlic and lots of spices including turmeric powder.

These vegan oats omelettes are healthy, loaded with fibre, the goodness of vegetables and the healing powers of turmeric powder.

This vegan oats omelettes recipe would be great for breakfast, dinner or even lunch. They are filling and can keep you going if you are craving something a little different from oats porridge or overnight oats.

This savoury oats breakfast recipe is great for those with gluten intolerance or if you don’t eat eggs but are craving “omelettes”. You can also make vegan omelettes from chick pea flour as an alternative to oats – click here for the recipe.

 

INGREDIENTS:

 

1/2 cup oats

1/2 chopped onion

1 small tomato chopped

1/2 green bell pepper chopped

1 leaf of cabbage chopped

1/3 cup chopped fresh coriander

1/2 tsp chopped garlic

1/2 tsp chopped ginger

Salt to taste

1/2 tsp cumin powder

1/4 tsp turmeric powder

1/4 tsp black pepper

1/2 tsp red chilli powder

1 tsp white sesame seeds

1/3 cup chick pea flour

1/2 cup water

Makes 3 – 4 medium sized Vegan Oat Omelettes

METHOD:

 

Add all the ingredients above to a bowl, mix and rest for 20 minutes.

On a non-stick skillet on a medium flame, pour a ladle of oat omelette mix on to it once it is hot.

Use a spoon to spread it out to a thickness of about 5mm.

Cook for about 10 minutes until it is browned and flip.

Cook on the other side for another 10 minutes or until ready to eat.

This turmeric infused vegan oats omelette with veg was so yummy and it’s best enjoyed hot with ketchup or any other chilli sauce.

This oats omelette can be made without the chickpea flour but I usually find it a bit tricky as my pure oats omelette always breaks apart. Adding the chick pea flour helps in binding and keeping the ingredients together.

Alternatively, you could add less vegetables and more oats and skip the chick pea flour.
