Vegan Ashwagandha Raw Cacao Chia Seed Date Snack Balls with Brazil Nuts, Almonds, Cashew Nuts & Pistachios – Vegan Healthy Snack Recipes

 

I have something very special for you today and one of my favourite healthy vegan snacks to eat. I can’t get enough of these.

Presenting my vegan ashwagandha snack balls with all the goodness of dates, raw cacao, chia seeds, brazil nuts, almonds, cashew nuts, and pistachios. Covered in coconut flakes, these ashwagandha date snack balls are super healthy, super filling and super delicious!

 

These ashwagandha raw cacao date snack balls are a wonderful way to incorporate your ashwagandha powder into something yummy. Ashwagandha powder tastes quite bitter and smells horrible (in my opinion) but once you’ve added it to these vegan date snack balls, you won’t even taste it nor will you smell it.

These vegan ashwagandha date balls do not take long to make at all. Preparing the ashwagandha date balls takes about 10 minutes and then you have to rest them in the fridge for 1 hour to harden.

 

INGREDIENTS:

 

1 tbsp coconut oil (if you are vegetarian, you can use ghee instead which is rich in Omega 3’s – use 1 tbsp melted ghee)

10 pitted dates

3 – 4 chopped almonds

10 chopped pistachios

2 chopped brazil nuts

5 chopped cashew nuts

1 tbsp chia seeds

1 tsp raw cacao powder

1 tsp ashwagandha powder

1/4 tsp salt

 

Coconut flakes for garnishing

METHOD:

 

Heat the coconut oil in a skillet on a low flame.

Add the dates and all the chopped nuts ( pistachios, brazil nuts, cashew nuts, almonds).

Add the chia seeds, cacao powder, ashwagandha powder and salt.

Mix.

Keep mixing and mashing the dates.

As the mixture becomes warmer, it will become easier to mix the nuts into the dates.

Cook for about 2 – 3 minutes until the nuts are fully incorporated into the dates.

Switch off the flame. (Cook on a very low flame, you don’t want to burn the dates).

Immediately transfer this ashwagandha date & nut hot mix to your work table / plate.

Handle with care. The mixture will be hot so take care not to burn yourself.

Wait for it to cool just a little bit but not too much. You need to work with a relatively hot date & nut mix to shape them into balls.

Quickly scoop about 1 tbsp of the hot date and nut mix and roll into balls with your hands.

Once you have finished making balls out of the entire ashwagandha date and nut mix, pour some coconut flakes on your work top and roll the balls into the flakes, covering them with coconut flakes.

Place the coconut covered ashwagandha date & nut snack balls on a plate and leave them to rest in the fridge for 1 hour.

They are then ready to eat!

 

Leave these vegan snack balls in the fridge and you can remove one when you want to eat it.

They should last for over a week but I can’t be sure as I normally finish eating them within a couple of days – they just taste so good 😀

When you have such delicious vegan ashwagandha date & nut snack balls in your fridge, is there even a reason to reach out for that unhealthy chocolate or crisp packet? I think not.

If you are allergic to certain nuts, you can always remove them or substitute them with other nuts such as peanuts, pecan nuts or even seeds such as sesame seeds, sunflower seeds, pumpkin seeds!
