Ground Ginger Powder Chai Spiced Pancakes – Easy Breakfast Recipes – Vegetarian Recipes – Eggless Pancakes

 

I’m so big on pancakes nowadays, mainly because it’s a fun way to enjoy breakfast. Pancakes are fun to decorate, fun to cook and taste delicious too for that sweet tooth.

Today, I made ground ginger powder chai spiced pancakes. I wanted to make something different and lately I’ve been craving spicy treats. The other day, I made ashwagandha chai spiced oats which were out of this world and I thought the pancakes might have the same effect on me!

I used four spices in these ginger chai spiced pancakes – cinnamon, ground dry ginger powder, nutmeg and cardamom. You can also add ground cloves if you like.

These ginger pancakes are eggless. I used white vinegar (you can also use apple cider vinegar) instead.

The ginger chai pancakes I made were not vegan as I used dairy milk but you can substitute it with plant based milk such as oat milk to make them vegan.

These eggless pancakes were delicious and I had them with a nice cup of tea 🙂

INGREDIENTS:

 

Makes 4 pancakes

 

Dry ingredients:

1 cup plain flour

1/2 tsp cinnamon

1/2 tsp ground ginger powder

1/4 tsp cardamom

1/4 tsp nutmeg

1 tbsp baking powder

1/2 tsp salt

 

Wet Ingredients:

3/4 cup milk

1 tsp white vinegar

1 tbsp coconut oil

1 tsp honey / maple syrup

 

For Garnishing:

Banana Coins

Blueberries

Grapes

Walnuts

Honey / other sweetener

METHOD:

 

Add the vinegar to the milk and keep it aside to curdle for 10 minutes.

In a bowl, add all the dry ingredients and mix.

In another bowl, add the curdled milk, coconut oil and honey (other sweetener). Mix.

Add the wet ingredients to the dry ingredients and slowly mix. Do not over-mix as this will prevent the pancakes from becoming soft and fluffy. Even if there are lumps, it’s fine, they will dissolve.

Keep this mixture aside to rest for 10 – 15 minutes.

 

Place your skillet on a slow-medium flame and wait for it to become hot. It is just hot enough when you pour a bit of water on it and the droplets dance on the pan.

Use a ladle and scoop ginger pancake batter.

Slowly pour it onto the pan and let it spread out on its own.

In a few minutes, you’ll see bubbles forming on top.

Wait for the pancake edge to get a bit cooked and then check the bottom of the pancake to see if it has browned.

The bubbles have to be forming on the top and the pancake has to be browned on the bottom – this is the time to flip it.

Flip it over as slowly as you can so that it remains soft and fluffy.

Cook for a few more minutes until the bottom is browned and feels ready to eat.

Create your stack of pancakes and finish by garnishing with fruits and honey or any other toppings such as whipped cream. Enjoy hot!

Hope you enjoy making these ground ginger chai spiced pancakes. They have a bit of a sour taste but a strong flavour. When combined with sweetener such as honey and fruits, they taste delicious.

You can use any fruits you like but I find that banana always goes well with spices.
