Cherry Chai Chia Pudding with Bourbon biscuits
Looking for an indulgent snack that’s relatively healthy? This Cherry Chai Chia pudding recipe is a yummy treat that uses cherries which are in season now. Cherries have got to be my absolute favourite berry because they look like little hearts. I used my Loose leaf Masala Chai blend for the chai flavour – no need to use artificial flavourings or syrups.

🍒 Cherry Chai Chia Pudding with Bourbon biscuits (Serves 1)
For the Chia Pudding:
- 2-3 tbsp chia seeds
- 1 tbsp Better Food Mood’s Loose Leaf Masala Chai Blend
- 1 cup water
- 1/2 cup milk
- 1 tsp sugar
- Handful of cherries chopped
- Bourbon biscuits
Instructions:
1) Make the masala chai. Boil 1 tbsp of our masala chai loose leaf blend with sugar in 1 cup of water for 10 minutes on a high flame. Add milk and boil for another 3 minutes. Take off flame and leave to cool.
2) Mix the chai seeds in the chai above (which makes 1 cup).
3) Leave overnight in the fridge.
For the Cherry Compote:
- 15 – 20 cherries
- Water
- sugar
Instructions:
1) Warm the cherries in sugar and a bit of water on a medium flame until you have a compote. It takes about 10 minutes for the cherries to break down.
☕ Assembling the chai chia pudding:
- We are going to layer this chia pudding.
- In a glass, add the chai chia pudding first until halfway full
- Then add the cherry compote
- Then add another layer of the chai chia pudding.
- Finally, garnish with chopped cherries and bourbon biscuits (or you could use biscoff)
