Carrot Cake Ginger & Cinnamon Breakfast Oatmeal – Ginger Recipes – Vegan Breakfast Recipes

 

Put your hand up if you love carrot cake? I do too and there’s a way to eat carrot cake without eating carrot cake. Voila! Presenting these delicious carrot cake ginger & cinnamon breakfast oats.

Carrots are packed with Vitamin A and what healthier breakfast oatmeal could there be than oats with carrot in it?

In order to give these carrot cake breakfast oatmeal that carrot cake flavour, I added ginger powder and cinnamon to it as well.

I also added very small pieces of lemon rind for that zesty flavour. You can skip these if you like.

With the current season, I’m loving all the beautiful fruits that I can now find in the supermarket. I bought cherries and sharonfruit this weekend and I was so excited to use them in these carrot cake breakfast oatmeal recipe.

You can use any fruits you like to garnish this carrot cake and ginger powder breakfast bowl.

These breakfast oats are vegan as I do not use any milk. You can use plant-based milk if you prefer or normal dairy milk instead of water.

INGREDIENTS:

 

1 small carrot grated

50g raw oats

Water as required

1/2 tsp ginger powder

1/4 tsp cinnamon

1/2 tsp lemon rind pieces

For Garnishing:

 

1/2 banana

1 sharon fruit

Handful of cherries

 

Sweetener of choice – I used honey. You can use maple syrup if you are vegan

 

METHOD:

 

Add your oats & water to a pan on a medium flame.

Add the grated carrot, cinnamon and ginger powder. Also add the lemon rind pieces.

Cook your oats until you have the desired consistency.

 

Pour into a bowl and garnish with banana, sharon fruit and cherries.

Drizzle with honey or your choice of sweetener and enjoy hot!

These carrot cake ginger powder and cinnamon oats were super wholesome and kept me going for several hours.

It’s a bowl packed with fibre, protein, vitamin A and lots of Vitamin C.

This breakfast oatmeal made for a wonderful alternative to my usual bowl of oats and I hope you make it too.
