Fenugreek Seed Recipes – Yellow Split Pigeon Peas Dahl Vegan Vegetarian Recipe for Lunch Dinner – High Protein Vegan Recipes

 

Here is a dahl recipe which is vegan made from yellow split pigeon peas. Vegetarians in India eat this every day whether it is for lunch or dinner with rice alongside roti and a curry. This is how vegetarians in India get their protein.

This fenugreek split pigeon peas dahl recipe is so delicious and filling and it will keep you going for hours without feeling hungry.

This fenugreek seed pigeon peas dahl recipe has been in my family for ages and has been passed down from my grandmother. It is my grandmother’s recipe and you know how good grandmother’s cooking always is.

There are a few ingredients I use which may be new to you such as fenugreek seeds or curry leaf or asafoetida powder. You can skip the asafoetida powder but do not skip the fenugreek seeds or curry leaf as these contribute to the fragrant flavour of the protein dahl.

Alternatively, you can find fenugreek seeds (also known as methi seeds – this is how they may be labelled) and curry leaves in any local Indian supermarket.

I used yellow split pigeon peas to make this high protein dahl vegan recipe. You can find this in any Indian supermarket. They are also called “toor dahl” in India and may be labelled as such.

I also used jaggery to make this dahl sweet. It is a by product when making sugar from sugarcane is much healthier than sugar as it is less refined and has a high iron content. You can also find this in any Indian supermarket and can also be labelled as “gor/gur”. Alternatively, use sugar or any other sweetener such as maple syrup.

You can eat this high protein vegan dahl recipe for lunch or dinner.

Serves 3 portions

INGREDIENTS:

 

1/2 cup yellow split pigeon peas

Water as required

Salt to taste

 

1 tbsp oil

1/2 tsp mustard seeds

1/2 tsp cumin seeds

4 cloves

4 – 5 small pieces of cinnamon bark

1 tsp fenugreek seeds

1 tbsp cut curry leaves (or 10 whole curry leaves)

1/4 tsp asafoetida powder

2 small vine tomatoes grated (or 1 large tomato)

1 tsp grated ginger

1/2 tsp turmeric powder

1/2 tsp red chilli powder

Handful of peanuts

1 tbsp jaggery

2 – 3 tbsp chopped coriander leaves

METHOD:

 

The first step is to boil the yellow split pigeon peas.

 

Take 1/2 cup of yellow split pigeon peas, wash them.

In a pan on medium flame, add the yellow split pigeon peas, water and salt.

Boil for about 30 – 40 minutes until it is ready. We want to make a soup like consistency out of these split pigeon peas so you must overcook them.

Alternatively, you can use a pressure cooker to cook the yellow split pigeon peas faster. Mine were done in about 10 minutes with 5 – 6 whistles.

 

Meanwhile, in another pan on a medium flame, add the oil.

Add the mustard seeds and cover the pan. Wait for all the mustard seeds to pop.

Once the mustard seeds have stopped popping, add the cumin seeds, cloves, cinnamon, fenugreek seeds, curry leaves and asafoetida powder.

Stir and let the spices simmer in the oil for 1 – 2 minutes to release their flavour. It will smell so fragrant, you’ll love it.

Add the grated tomato, ginger, turmeric powder, red chilli powder and peanuts.

Stir and let it cook for 3 – 4 minutes.

Switch off your flame and keep aside.

 

Check if your yellow split pigeon peas are cooked. Mix them and create a soup like consistency.

If they are ready, add them to the tomato mix we made and switch on the flame again.

Let the flavour from the tomato spice mix infuse into the dahl.

Add water if you feel the dahl is too thick. I personally prefer a watery consistency.

Add the jaggery and a dash of lemon and stir. Mix the jaggery until it has melted into the dahl.

Let this mixture cook for about 10 – 15 minutes and keep adding water if it becomes thick.

Switch off and add the coriander leaves.

Your high protein vegan split pigeon peas dahl is ready.

Enjoy hot served with rice or roti.
