Valentine’s themed healthy breakfast oats – ginger beetroot with berries and omega seeds mix
For this valentine’s themed breakfast oatmeal bowl, I decided to go for beetroot as the vegetable to give it that red pop.
Beetroot counts as one of your 5 a day and is thought to be anti-inflammatory. It also adds that much needed fibre to your diet.
Ginger with beetroot is a delicious combo and I also added cinnamon for that lovely spicy taste.
This breakfast combines atleast 10 different fruit and plant varieties with lots of fruits, grains, spices and seeds.
I garnished it with my Omega 6 Seeds mix which is super easy to use and has pumpkin seeds, sunflower seeds, flaxseed, chia seeds, hemp seeds and sesame seeds in it.
INGREDIENTS:
For Porridge:
50g rolled oats
1/4 grated beetroot
Water as required (or plant-based milk e.g. oat milk / almond milk / dairy milk if you are not vegan)
1/2 tsp cinnamon powder
1/2 tsp ginger powder
1/2 banana
For Garnishing:
Blueberries
Grapes
Strawberries

METHOD:
In a pan on a medium flame, add your oats and water/milk.
Add the diced banana, grated beetroot, cinnamon and ginger powder.
Cook for about 2 – 5 minutes until the oats are cooked and you have the desired consistency for the oats.
Pour into your bowl and garnish with the grapes, blueberries, strawberries, seeds mix and sweetener.
