Easy Winter Breakfast Oats with Ginger Molasses Persimmon Pomegranate Almonds and Pumpkin Seeds

 

Today, it is 2 degrees Celcius (mega cold) and for breakfast, I was craving something warm. Also, I’m very wary of the winter at the moment and the Omicron virus. I mean it just doesn’t seem to end, does it?

In order to keep my immunity high, I normally consume ginger. I thought it would be great to prepare oatmeal with ginger. The natural addition for me was also molasses because I use molasses to sweeten my ginger tea.

My ginger molasses tea is the most healthiest thing one could consume because the ginger is great to ward off colds and molasses have so much iron in them. Also, if you add milk to this drink, it tastes like coffee without the caffeine 😉

Anyway, here’s how I prepared my ginger molasses breakfast oatmeal.

PS: As we approach the Christmas season, I tried to add a christmas vibe to my oatmeal by making a Christmas tree with the persimmon. I try 🙂

INGREDIENTS:

Oats (1/2 cup)

Water as required

1/4 tsp grated fresh ginger (you can also use dry ginger)

3/4 tsp molasses

1/2 persimmon

Pomegranate arils and pumpkin seeds for garnishing

5 almonds for the christmas tree star 😀

 

METHOD:

Add the oats, water, ginger and molasses to a pan and heat on a low-medium flame.

Keep stirring for about 2-3 minutes until the oatmeal is cooked.

Add your persimmon, pomegranate arils, pumpkin seeds and almonds on top of the oatmeal.

Enjoy hot!

Honestly, this was such a perfect breakfast for today’s cold morning. It just tasted so delicious and heartwarming, I gobbled it down. It is great if you’re vegan as it doesn’t use any dairy products. I only use water to cook the oatmeal or you can use any plantbased milk but it may change the taste.
